MissingMons Data Pack (1.21.1, 1.20.1) adds textures, models, animations and spawn for cobblemon that’s curently not in the game. This data pack adds over 30+ Pokémon.

Sandygast (can be found on the beach)
Finizen (can be found in the lukewarm ocean)
Gimmighoul (can be found in stronghold and can be evolve into Goldengo if given beacon to held)
Meltan (can be found on near iron block)
Melmetal (Evolve from Meltan at level 70 while holding an Anvil)
Cramorant (can be found in swap)
Poltchageist (can be found in Spooky Biome)
Sinischa evolve from Poltchageist by having it hold a cracked pot
